Classic Marble Cake
A soft vanilla and chocolate cake with beautiful hand-swirled layers - simple enough for an everyday bake and special enough to share.
Prep: 15 minsCook: 25 minsTotal: 40 minsYield: 10 slices
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup butter, melted
- 1 tsp vanilla extract
- 1 cup milk
- 2 tbsp cocoa powder
Instructions
- Prepare the pan. Preheat the oven to 160°C / 320°F. Line a baking pan with parchment paper, lightly oil it, and set aside.
- Mix the dry ingredients. Sift the flour, baking powder, and sugar into a large mixing bowl.
- Melt the butter. Melt the butter gently over medium-low heat, then let it cool slightly.
- Cream the wet mixture. Beat the eggs and melted butter with an electric mixer until creamy. Scrape down the bowl, then gradually beat in the vanilla and milk.
- Make the batter. Add the flour mixture and mix only until combined. Avoid overmixing so the cake stays tender.
- Make the chocolate batter. Transfer about 1 cup of the vanilla batter to a smaller bowl. Stir in the cocoa powder until smooth.
- Layer. Pour a layer of vanilla batter into the pan. Spoon chocolate batter over it, then add more vanilla batter. Repeat until both batters are used.
- Create the marble. Draw a knife or toothpick through the batter in loose curves. A few swirls are enough - do not completely blend the colors.
- Bake. Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean. If the top browns early, cover loosely with foil.
- Cool and serve. Cool in the pan briefly, then transfer to a wire rack. Slice once cooled and serve.
