Soft & Chewy Pretzel Bites

Ingredients
- 1 1/2 cups warm water
- 2 1/4 tsp active dry yeast
- 1 tbsp granulated sugar
- 1 tsp salt
- 4 cups all-purpose flour
- 2 tbsp butter, melted
- 2/3 cup baking soda (for the boiling bath)
- 10 cups water (for the boiling bath)
- 1 large egg, beaten
- 1 tbsp coarse salt
Instructions
- Activate the yeast. Stir warm water, yeast, and sugar together. Rest for 5–10 minutes, until foamy.
- Make the dough. Mix in salt, flour, and melted butter. Knead for 5–7 minutes until smooth and elastic.
- Let it rise. Place in a lightly greased bowl, cover, and let rise for about 1 hour or until doubled.
- Shape. Heat the oven to 230°C / 450°F. Divide the dough, roll into ropes, and cut into bite-size pieces.
- Boil. Bring the bath water and baking soda to a gentle boil. Boil the bites in batches for about 30 seconds, then drain.
- Finish. Arrange on lined trays, brush with beaten egg, and sprinkle with coarse salt.
- Bake. Bake for 12–15 minutes until deeply golden. Brush with a little melted butter while warm if desired.
